Bee-bim what?! Bee-bim bop is a traditional Korean dish. It is rice topped with a variety of vegetables and usually beef. According to the book that the princess borrowed from the library, bee-bim bop means “mix mix rice”. We loved reading Bee-Bim Bop! by Linda Sue Park. At the very back, she even includes her family recipe which is the one I use to marinate the beef.

I don’t like to freeze meat. I used to buy meat in bulk from Costco: package it in small, neat, labelled packages and toss in the freezer. I thought I was saving money but it ends up a pretty expensive venture for me since I will more than likely toss most, if not all, of the freezer-burnt packages into the garbage. I am not good with defrosting. They say to never defrost meat at room temperature and instead to put meat in the fridge the night before but I can’t think that far ahead. And I absolutely hate defrosting meat in the microwave. So, I don’t do that anymore. Which is good… I can now store my ice cream maker in there. That’s for another post.

However, I will freeze marinated beef for bee-bim bop. This is the only exception I will make. It’s extra tasty having been marinated for so long. After defrosting, I just cook everything up and serve. I often change up the vegetables depending on what I have on-hand but will always make the eggs since the kids love eggs and they love eating it with seaweed.
